Buns (& no bread machine)

I’m a bit lazy these days so I write recipes either in French or in English but I can’t be bothered to do both… Anyway, this one comes from a French blog so if you can’t read English, you will find all the instructions there (it’s actually a very nice blog to look at, plenty of inspiration :)).

Those buns can be made without a bread machine. They need a bit of kneading (10 minutes) and certainly some time to let the dough rise but the result is really great.

Ingredients (for 8 small buns)

  • 10g dried active yeast
  • 15 cl tepid milk
  • 430g bread flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 egg and 1 egg yolk (keep the egg white to glaze the buns)
  • 20g soft butter
  • Sesame and poppy seeds

Preparation

  • Put the yeast in the tepid milk and stir. Stir well and set aside for about 10 minutes
  • Mix the flour, salt and sugar and add the beaten egg and egg yolk
  • Add the butter and finally the milk + yeast
  • Mix all the ingredients until the dough doesn’t stick to the bowl
  • You can add a bit of water or milk if it’s to dry (I’ve probably added around 5 or 6 tbsp of tepid water)
  • Knead the dough for about 10 minutes
  • Cover with a humid tea towel and set aside for at least 1 hour
  • After this, knead again a bit the dough to remove the air and cut it into 6 or 8 pieces
  • Roll them to give them the shape you want and put them on a baking tray covered with baking paper (make sure to leave some space in between as they will grow)

  • Cover for another 45 minutes
  • Preheat the oven to 180
  • Glaze the buns with some egg white and sprinkle with sesame or poppy seeds
  • Bake for 10 to 15 minutes and let them cool on a grill
