Peas and Stilton pasta

That’s unfortunate I have not used fresh peas for this recipe as I must admit you lose a bit of their taste when using cooked peas. The mix with Stilton is however very nice and makes very creamy pasta.

The dish is nicely seasoned with the wild garlic which I discovered recently thanks to a friend. I had never seen garlic under the form of a salad leaves and the taste is surprisingly strong. The leaves look like this:


Ingredients (serves 2)

  • 200g pasta
  • 200g green peas (preferably fresh)
  • 50/60g Stilton
  • 3 nice wild garlic leaves
  • parsley
  • lemon juice
  • 3/4 bleached almonds


  • Cooked the pasta in boiling water until, they are almost al dente but not quite yet
  • Meanwhile, mash the peas with chopped garlic leaves, parsley, Stilton, chopped almonds and lemon juice

  • Season this purée with pepper
  • Keep 2 or 3 tbsp of the pasta cooking water before draining
  • Cook for 2/3 minutes the mashed peas and Stilton on low heat with the cooking water
  • Add the pasta and cook for an additional 2 to 3 minutes coating the pasta with the sauce
  • Serve immediately and enjoy 😀
