One of my housemate recently left the house to move to another place. She also left an untouched French camembert in the fridge… It took us a while to realise the cheese was her property and as the smell was starting to be quite strong, I decided to do something about it (I mean, seriously, you can’t throw away a camembert when it’s just perfectly done…). I know figs’ season is later in August/ early September but that was really a nice combo!
Ingredients
- 200g flour
- 70g butter at room temperature
- 1 egg
- Pinch of salt
- 3 branches of thyme (preferably fresh)
- 1 camembert
- 2 red onions
- 4/5 figs
- Honey, thyme
Preparation
- Mix the flour, butter, egg, salt and thyme until you get a uniform pastry
- Wrap the pastry in a film and place in the fridge for an hour
- Peel and slice the onions
- Cook the onions in a pan with a bit of olive oil
- Cover the pan and stir frequently until tender
- Pre heat the oven to 200°
- Roll the pastry out on a floured work surface
- Lay the pastry on baking paper and put it in the baking pan
- Spread the cooked onions, add the sliced camembert and the figs cut in wedges
- Drizzle some honey and thyme
- Cook for about 25/30 minutes

- 70g de beurre à température ambiante
- 1 œuf
- 1 pincée de sel
- 3 branches de thym (frais de préférence)
- 1 camembert
- 2 oignons rouges
- 4/5 figues
- Miel, thym
Préparation
- Mélanger la farine, le beurre, l’œuf, le sel et le thym jusqu’à obtenir une boule de pâte homogène
- Filmer la pâte et laisser reposer une heure au frais
- Peler et émincer les oignons
- Faire revenir les oignons dans de l’huile d’olive et couvrir la poêle. Laisser fondre en remuant régulièrement et ajouter un peu de miel en fin de cuisson
- Préchauffer le four à 200°
- Étaler la pâte sur une surface farinée puis déposer dans un moule recouvert de papier sulfurisé
- Déposer les oignons sur le fond de la pâte (percée), ajouter le camembert tranché et les figues
- Parsemer de thym et d’un peu de miel
- Enfourner pour environ 25/30 min
