Celeriac / céleri « remoulade »

…well a kind of!

While I was waiting for a friend at Itsu for lunch the other day, I flipped through their recently published cookbook. I didn’t buy the book but I felt in love with this Japanese interpretation of « céleri remoulade » and memorised the recipe :). The only tricky ingredient that is needed is the silken tofu but you can usually find it in organic shops.

Silken tofu is also called soft tofu and although it is made from the same ingredients as regular tofu, it is not prepared the same way and is not interchangeable in a recipe. According to Andrea Nguyen, author of the cookbook Asian Tofu: Discover the Best, Make Your Own, and Cook It at Home, “making regular tofu entails pressing the soy curds and separating them from the whey, whereas for silken tofu, there is no separation or pressure exerted. The name silken tofu reflects the traditional Japanese process of molding the tofu in silk-lined fabric”. Usually, you can find that kind of tofu in miso soups.

Anyway, I added a small potato to the salad and some sardines… et voilà! A nice diner 🙂

Ingredients (for 2)

  • Half head of celeriac
  • 2 cooked potatoes
  • 2 tbsp silken tofu
  • 1 tbsp miso paste (I’ve used a Barley Miso paste)
  • 1 tsp wasabi paste
  • Chives and parsley
  • Juice of a lemon
  • Sardines

Preparation

  • Grate the peeled celeriac and cut the potatoes in chunks
  • In a bowl, beat the tofu until creamy
  • Add miso paste, wasabi, lemon juice and herbs
  • Add the celeriac and the potatoes and mix to coat them with the sauce
  • Serve with sardines and a slice of toasted bread

Ingrédients

  • Une demi tête de céleri rave
  • 2 pommes de terre cuites
  • 2 CS de tofu soyeux
  • 1 CS de pâte de miso
  • 1 cc de wasabi
  • Ciboulette et persil
  • Le jus d’un citron
  • Sardines

Préparation

  • Peler et râper le céleri rave et couper les pommes de terre en morceaux
  • Dans un bol, battre le tofu jusqu’à ce qu’il ait une consistance crémeuse
  • Ajouter la pâte de miso, le wasabi, le jus de citron et les herbes
  • Rectifier l’assaisonnement au besoin
  • Verser le céleri et les pommes de terre dans cette sauce et bien mélanger le tout
  • Servir avec des petites sardines et une tranche pain grillé
