I love the smell and taste of celeriac. When I cook it, it fills the kitchen and my clothes with this very particular « fragrance », the smell of a fertile soil, of a farm in countryside… I just love it 😀
I’ve found this recipe on a very nice blog called Five and Spice. Chorizo and celeriac make a perfect match. Although I had chosen a tasty variety of apple, I don’t think it really adds to the recipe.
Ingredients (serves 2)
- 1 small celeriac
- ½ apple
- ¼ onion
- Garlic clove
- Fine slices of chorizo
- Paprika
- 1 tsp vegetable stock powder
Preparation
- Put a large saucepan of water to boil
- Add salt, peeled celeriac cut into chunks, finely chopped onion, peeled apple cut in chunks
- Add 1 tsp of vegetable stock powder
- Cook for about 20 min until the celeriac is tender
- Blend the vegetables in puree, add 1 tbsp of olive oil and add as much cooking water as you want (depending on how thick you want your soup to be). Add salt and pepper
- In a small frying pan, cook the chorizo slices 2 minutes each side with the crushed garlic clove and a bit of paprika
- Serve the soup with the “chorizo chips” and the oil from the pan

Ingrédients (pour 2)
- 1 petit céleri-rave
- ½ pomme
- ¼ oignon
- 1 gousse d’ail
- Quelques fines tranches de chorizo
- Paprika
- 1 cc de bouillon de légume en poudre
Préparation
- Porter une grande casserole d’eau à ébullition
- Saler puis ajouter le céleri pelé et coupé en morceaux grossiers, l’oignon finement émincé et la pomme pelée et coupée en morceaux
- Ajouter 1 cc de bouillon de légume et cuire à feux moyen pendant 20 minutes
- Mixer les légumes, ajouter 1 CC d’huile d’olive et ajouter de l’eau de cuisson jusqu’à obtenir la consistance souhaitée. Saler et poivrer
- Dans une petite poêle, faire griller les tranches de chorizo avec la gousse d’ail écrasée et un peu de paprika
- Servir la soupe avec les “chips” de chorizo et leur huile
Je la trouve bien sympathique cette soupe…
Ca doit être délicieux et la photo est très réussie ; c’est léger mais gourmand en même temps, idéal pour la saison! Bonne année
