Version française ci-dessous
I had this recipe in the list of the hundreds (thousands??) of cakes I want to bake once since a long time. It’s a classic and although it often comes with icing, I just made it « naked ». And trust me, it doesn’t need any icing. This recipe is simply amazing and will give a very moist cake.
Ingredients
- 3 carrots finely grated and soaked in kitchen towel
- 3 eggs
- 130g cane sugar
- 150g flour (100g white and 50g spelt)
- 2 tsp baking power
- 1/2 tsp bicarbonate
- 1/2 tsp gingerbread spices
- 20g grated coco
- 20g walnuts chopped
- 50g milk
- 40g olive oil
Preparation
- Preheat the oven to 180°
- Mix the grated carrot with the egg and the sugar
- Add the dry ingredients, oil and milk
- Stir the batter just enough to moisten the dry ingredients (you don’t want to mix too much)
- Pour the batter in a baking tin and cook for 40 minutes
- Let it cool and remove from the tin

- 3 carottes finement râpées et « essorées » sur du sopalin
- 3 oeufs
- 130g de sucre de canne
- 150 de farine (100g de farine blanche, 50g épeautre)
- 2 cc de levure
- 1/2 cc de bicarbonate
- 1/2 cc d’épices à pain d’épice
- 20g de noix de coco râpée
- 20g de noix hâchées
- 50g de lait
- 40g d’huile (olive dans mon cas)
Préparation
- Préchauffer le four à 180°
- Battre les carottes avec le sucre et les oeufs
- Ajouter les ingrédients secs puis le lait et le miel
- Mélanger la préparation juste assez pour bien humdifier les poudres
- Verser dans un moule à cake et enfourner pour 40 minutes
- Laisser tiédir avant de démouler
